this is some straight texas shit here. GOOD LUCK finding it outside of texas. even Jamie didn’t know what it was. it’s basically mexican beef stew. this is my Tia Elida’s recipe’s. this and some good salsa ranchera and some fresh tortilla’s and i’m SET. i’m easy i know. some use bell peppers and tomato’s, i ran this recipe with tomato’s. to make.
1 1/2 lbs beef for stew
1 med onion
3-4 cloves garlic
2 TBS comino
4 TBS flour
1 can rotel tomato. drain half the liquid
heat oil and saute the onions and garlic until translucent. add beef and comino (i added some chipotle powder) and brown meat over med heat for about 15 minutes. add flour and mix well, let thicken and get a LITTLE brown (takes about 15 minutes….watch it and keep stirring every 3-4 minutes) add tomatoes and mix. drop heat to low and cover. let cook for 30 minutes. uncover and cook for 30 more minutes. the gravy will thicken. serve with beans and rice or place in fresh flour tortilla’s for some BOMB ass tacos. i run salsa ranchera with mine.
