today’s food porn is done by reader Rojo. i’ve never made pad thai, it’s one of those dishes that i’ll pay to eat and i don’t eat too often, but i certainly like it. but maybe some of you might want to run it. so….i’ll let him rock his recipe.
“I’ve made this recipe for friends and family and it has never let me down. Shit, I made it over my friends’ place and her husband went back for thirds. I used to eat frequently with them and never saw him eat that much until that one time.
2 garlic cloves, chopped
2 Tbsp natural peanut butter
1 Tbsp Honey
2 tsp roasted sesame oil
1 Tbsp soy sauce
1 Tbsp Siracha Rooster Sauce
1 Tbsp Fish sauce
2 Tbsp Peanut oil
1 lb peeled large raw shrimp
2 red bell peppers, thinly sliced
1 cup sliced shitake mushrooms
6 oz soba buckwheat noodles, cooked rinsed and drained
3 scallions, sliced
1/4 cup roated peanuts, coarsely chopped
limes, optional, for serving
1. In a blender, combine first seven ingredients and 0.25 cup of water; puree until smooth and set aside.
2. Heat a wok or large skillet on medium high. When it’s hot, add 1 tbsp of oil and coat pan. Then add shrimp and cook until they just turn pink, about two minutes. Place them in a plate.
3. Add another tbsp of oil to the pan and swirl, Add the peppers and mushrooms; stir-fry for 2 minutes. Return shrimp to pan along with the peanut sauce, cooked noodles, and scallions; stir fry for 1 minute.
4. Serve with peanuts and lime wedges.”
