Delicious Tacos

been a while since i did any food porn, and since i cooked last night i thought i’d take a few pics. i had a craving for carnitas, which is shredded mexican pork. i went out and bought a 4lb. shoulder. let’s do ‘dis.

1 pork shoulder (or butt, whatever)
1 med onion (chopped)- reserve 1/4 cup
1 med tomato (diced)
1 cup cilantro
3 can’s rotel tomato
3-4 TBS cumin
5-6 chiptles (in adobo sauce)
1 lime

place shoulder in pot (fat side down). add about 2-3 inches of water. add everything except diced tomatoes and one can of rotel. bring to a boil. drop heat to low and cover. let cook 1 1/2 hour per pound. after half the allotted time, flip the shoulder and cover. when you can press into the meat and it gives, remove it from the pot. place in and pull it apart with forks. add the can rotel and stir. add more salt and cumin if you want.

place pan under a broiler for 5 minutes. remove and stir then place back under broiler for 3-4 minutes. stir. here are the results.

    I throw the tortillas on a very lightly oiled cookie sheet, lightly cover with shredded Monterey jack, and put ’em under the broiler, high up, just enough to brown the cheese. The tortillas should stay flexible.

    It’s about as Mexican as an Irishman from Pennsyltucky, but it’s pretty damn good. Everybody I’ve tried it on raved.

    Damn I love cilantro.
